GRAPE VARIETIES: 40% Parellada, 20% Xarel.lo, 25% Macabeo, 10% Chardonnay and 5% Pinot Noir

VINTAGE: 2006
AGING: Mínimum 71 months in “rima” in contact with yeast. 
FERMENTATION: Slow low-temperature fermentation for 2-3 months in the bottle.
TASTING:
The colour of this cava is pale yellow with green hints, it has numerous streams of fine bubbles. The aroma is floral with some notes of spices and flowers of orange tree. Its taste is very dry, with some notes of toast, dried fruit and bakery flour combined with ripe fruit which still remain on the tree, fruit puree and raisins, well balanced with the cava aging notes. It is very persistent, leaves complex flavours that last in time.
Made of one of the best vintages,  retaining its characteristics, it does not lose its personality and even increases the sensation of balance and complexity that makes it unique.

RECOMMENDATIONS
Store in a vertical position in its case. Keep in a dry, cool and dark location. As a Gran Reserva, I recommend serving it at between 6-10 ºC
PAIRING FOOD: It is great with complex dishes, combining well with the tastes of meat and fish. It is also good with smoked meat and fish. I like it with veal stew and roasted fish, but especially when there is enough time to enjoy it calmly while it is opening its hidden secrets.
